Includes skinning, vacuum sealing, and standard cuts: steaks, roasts, and burger meat. All meat is processed individually to ensure you get your own deer back.

Artisanal Sausages

Choose from our signature house recipes: Summer Sausage, Snack Sticks, and Breakfast Links. We offer various spice levels and custom fat ratios for the perfect flavor.

How It Works

Drop-off Your Deer

Bring your field-dressed deer to Merle's Place during regular business hours. Ensure your harvest is properly tagged and clean before arrival to ensure the highest quality processing.

Select Your Cuts

Consult with our lead butcher to choose your preferred cuts—from backstraps and roasts to our signature venison summer sausage and snacking sticks.

Expert Processing

Our skilled team meticulously handles every deer, aging the meat to perfection before hand-trimming and vacuum sealing each cut for maximum freshness and heritage quality.

Pickup and Enjoy

We will notify you once your order is ready for pickup. Bring your coolers to transport your custom cuts safely home and stock your freezer for the season.
